Iowa Harvest Corn Chowder in Background with Apple Thyme Compote in Foreground

Ingredients:
1/2 Pound Bacon, Chopped
4 Cups Onion, Diced
2 Cups Celery, Diced
1 Tablespoon Minced Garlic
6 Cups Russet Potatoes, Peeled and Diced
2 Pound Iowa Choice Harvest Golden Sweet Corn
10 Cups Chicken Stock
2 Cups Heavy Cream
1/2 Cup Flour
4 Tablespoons Butter

Directions:
Cook bacon and allow to render fat. Remove bacon and add butter, leaving any drippings. Sauté onion, celery and garlic until softened. Add flour and stir to make a roux. Cook for 1 minute. Add chicken stock and potatoes. Allow to cook until potatoes are cooked through and soup is slightly thickened. Adjust seasoning with salt and pepper. Add corn and allow to heat through. Serve in bowls garnished with bacon.
