Iowa Harvest Corn Chowder and Apple Thyme Compote, served with pork

1 Tablespoon Butter
1 Small Red Onion, Diced
1/2 Cup Celery, Diced
2 Cups Iowa Choice Harvest Iowa Grown Apples
1/4 Cup Raisins
2 Cups Cider Vinegar
1/3 Cup Brown Sugar
1 Tablespoon Fresh Thyme, Minced
1 Tablespoon Fresh Sage, Minced
Pinch Crushed Red Pepper

Sauté onion, celery in butter until softened. Add apples and raisins and cook for 2 minutes. Add remaining ingredients and allow to reduce until slightly thickened. Adjust seasoning and allow to cool. Use compote on any pork dish.
