Baked Buttermilk Corn Donuts

For Donuts:
1 package Iowa Choice Harvest Golden Sweet Corn
3 C flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
½ cup melted butter
½ cup vegetable oil
2/3 cup buttermilk
3 eggs
2 C sugar
2 tsp vanilla
1 tsp cinnamon
1 cup applesauce

For Frosting:
2 C powdered sugar
½ stick butter-softened
1 tsp vanilla
3 – 4 tbsp milk

Instructions:

  1. Preheat oven to 350 degrees
  2. Coat doughnut pan with non-stick cooking spray
  3. Combine flour, baking powder, baking soda, spices, and salt in medium bowl and set aside
  4. Combine melted butter, oil, buttermilk, eggs, sugar, apple sauce, and vanilla in large bowl. Add dry ingredients and stir to combine.
  5. Fill donut pans and bake 15 – 18 minutes
  6. Remove from pan and cool
  7. Cream frosting ingredients together in medium bowl. Apply frosting after donuts have completely cooled
