Apple Cranberry Cobbler

4 cups Iowa Choice Harvest frozen Iowa Grown Apples
1 cup frozen cranberries
1 tsp. ground cinnamon
3/4 cup + 1 cup sugar
3 Tbsp. butter, softened
1 tsp. vanilla bean paste
1 cup flour
1 tsp. baking powder
1/4 tsp. + 1/4 tsp. salt
1/2 cup milk
1 cup sugar
1 Tbsp. cornstarch
1 cup boiling water

Place fruits in bottom of a greased 8×10 inch baking dish. Sprinkle with the cinnamon.

Cream 3/4 cup sugar with the butter and vanilla. Mix 1 cup flour, baking powder, and 1/4 tsp. salt and add to butter/sugar alternatively with the milk. Spoon the batter in dollops over the fruit (will not completely cover the fruit).

Mix remaining sugar, cornstarch, and 1/4 tsp. salt and sprinkle over the batter. Pour boiling water over it all. Bake at 275 degrees for 50-60 minutes. Serve warm with cinnamon whipped cream (recipe follows).

Cinnamon Whipped Cream
1/2 cup heavy whipping cream
2 Tbsp. powdered sugar
1 Tbsp. sour cream
1/4 tsp. ground cinnamon

Whip the cream and sugar to soft peaks. Stir in the sour cream and cinnamon.
